A Five-Generation Family Tradition

The Bertran family took over Forn Mistral, located at Ronda Sant Antoni, 96, in 1977. Years later, in 1994, they opened a new bakery with a tasting area on Torras i Amat Street, 7. In 2019, nine months before the start of the pandemic, the family became a part of the Gràcia neighborhood with the opening of a shop at Astúries Street, 35. Today, five generations have dedicated their lives to keeping the tradition of great Catalan bakeries alive.

Their commitment is to preserve the quality and prestige that have accompanied them since the beginning. In a motivating environment, Jaume Bertran and his family personally train their teams, transmitting the spirit of bread culture. From the careful selection of raw materials to the artisanal production of goods and customer service, everything follows the same philosophy: excellence is non-negotiable. For this reason, they constantly supervise and control quality, not only in the product but also in how they treat their customers.

Organic and Quality Products

Forn Mistral is one of the few bakeries in the country authorized to produce bread with the ancient Khorasan wheat variety, from the registered trademark KAMUT® by Kamut International Ltd. (KI), always sourced from organic farming and under strict quality standards. Their wheat, kamut, and spelt breads are all organic certified.

Tradition and Innovation

Faithful to tradition, they also work with an innovative spirit: they improve their facilities, and incorporate new raw materials, technologies, and natural production processes to expand their range of products. All their "Panes de Payés" (Catalan farm breads) are made following the regulations required by the Pa de Pagès Català Protected Geographical Indication.

Finalists in the Best Pa de Pagès Català competition in 2016, 2017, and 2018, and winners in 2019.
Awarded a TOP Forners Star in The Spanish Route of Good Bread in 2017, 2018, and 2019.
Selected as one of the best bakeries in Barcelona between 2014 and 2018.

Commitment to the Community

Additionally, they are part of the Gremi de Flequers de Barcelona (Barcelona Bakers' Guild), where Jaume Bertran currently serves as president, and are key collaborators with the Obra Social Ernest Verdaguer de Panàtics (Ernest Verdaguer Social Work of Panàtics).
